Would any of these work great for old games?
SC-88Pro
SC-8850
Edirol SD-90
(yes I know they are probably over the top, but I want the best)

Mmmm. I hear you can set the SC-88 Pro to act like an SC-55. I wonder if i'm totally off base, or if that applies to the new modules.

Intel i7 5960X
Gigabye GA-X99-Gaming 5
8 GB DDR4 (2100)
8 GB GeForce GTX 1070 G1 Gaming (Gigabyte)
I'm not familiar with the latter two, but my understanding is that the SC-88Pro is 100% compatible with the SC-88, SC-55MkII Sound Canvas synths. Most DOS games that mention Sound Canvas are referring to the SC-55 or the SCC-1 (SC-55 on an ISA card, to be used internally in a PC).
I personally own an SC-88, and you can set either individual channels or a global setting for SC-55MkII mode.
For the SC-8850 and SD-90, I would recommend downloading their manuals and looking for SC-55 compatibility mode settings.
