I have a IBM300GL and on some games like NASCAR Racing 2 where joystick support is always on, the game defaults to the joystick controls
I also launched Boppin and the selector was going down always (I have nothing plugged into the joystick port of the sound card whatsoever

Is there a way to disable the joystick port entirely?

I'd check to see if there is a jumper for this on the sound card. Another possibility is to be software-configurable (again from the card software)
