I've been trying to run some games on my iBook, and they simply do not perform well. I think it's because of some of the settings in the CFG file. I've tried changing them but nothing happens? How can I change the way the graphics are rendered and what not? I've also increases CPU cycles, which doesn't seem to improve anything.

Not to be a smart ass, but you can read the README to see these options. You may also want to consider using a front end. There are a couple linked to for OSX on the DOSBox homepage.

I did read the readme, but it seems to be the exact same as the PC version...
I mean I have the program running great on my PC, so I do know how to operate DosBox. But what exactly is a frontend?

iBook. That's a PPC-platform isn't it?

Normal core is the only available core on the PPC-platform, and the PPC is not doing a very fine job with dosbox, to be blunt.
You can improve performance slightly by compiling your own version.

Also, if you compile it yourself you can enable OpenGL.
