Might you be running an ATI graphics card, by any chance? I've heard those seem to have speed issues when modifying palettes.

Unless you're really that irritated by a system tray applet, the ad-ware components are strictly optional! Just pay a little more attention during the install process, and make sure you're using Daemon Tools Lite instead of the Standard or Pro versions (which appear to be evaluation shareware).

So far the only one I've had success with is QEMU, but it's certainly not perfect (I only installed it for one game and it doesn't do keyboard handlers very well), nor is it very easy to use.

If DOSBox isn't putting out any sound, there may be something wrong in your configuration - could you check your Dosbox.conf and see if the sound may be disabled, or make sure your game in question is set up properly?

Have you set DOSBox's CPU core to "Dynamic"? Outside of that I'm not sure what else can be done to improve the game's speed - I recall Azrael's Tear being very demanding of the system's resources, even on a real DOS machine of the time.

The movies in most Interplay games of that era tend to have stuttering issues in DOSBox, I notice, usually (partially) fixed by using a BIN/CUE image instead of the original disc...but your mileage may vary, I'd think.

AVI files are not played using Quicktime, at least not a version that old. Try looking for old Video For Windows codecs.
